An important thing to remember when drying fruit is what you put in is what you get out! This is why we recommend you always use high-quality, ripe fruit. The only exception to this rule is that overripe fruit can be turned into delicious fruit rollups!
Drying times can be affected by humidity, altitude, moisture content & thickness of the slices. Cut your produce at a consistent size so that they will dry at the same rate - around 5mm is the ideal thickness.
With an Ezidri there is no need to pre-treat fruit! It can be simply sliced & dried. You can use citrus or pineapple juice to reduce browning of fruit such as apples & bananas, however it is simply for cosmetic reasons as it doesn't change the taste. Of course you can always dip them or coat them with other things such as honey, nuts & coconut to create delicious variations!
When dry, most fruit will feel pliable & a little leathery. To check if it's dry simply tear a cooled piece in half & check to see if any moisture comes out by giving it a little squeeze.
Always allow your fruit to cool before packing it into an airtight container or ziplock bags. It should then be stored in cool, dry & dark conditions (the bottom of a cupboard is perfect) or frozen.
A great tip from one of our EziClub Members - when cutting kiwi-fruits use an egg cutter! Simply cut off the hard tops & push through for even slices!
